MADEIRA WINES — A fortified wine prized equally for drinking and cooking. Madeira is processed with heat, aging in barrels and exposure to oxygen to duplicate the effect of a long sea voyage. This results in a mild kind of pasteurization, giving the wine a color similar to a tawny port.
